Strawberry Rhubarb Crisp – Gluten Free

It’s strawberry time! I love strawberry season. I always take the girls to pick our own strawberries. There’s nothing like it. Fresh, juicy, warmed by the sun, right off the vine. I can’t get enough. Tonight I made a strawberry rhubarb crisp, topped it with vanilla ice cream and I was in my glory. I hope you love this recipe as much and I do.

Note: you can substitute flour for the tapioca but I find I can taste uncooked flour sometimes so I switched to tapioca and it’s much better.

Strawberry Rhubarb Crisp – Gluten Free

A sweet and tart summer favorite
Course Dessert
Servings 8 servings


  • 3-1/2 cups rhubarb stalks cut into 1/2" pieces, cut off leaves and discard -they are poisonous, trim ends
  • 2 cups strawberries, stemmed and quartered
  • 3/4 – 1 cup sugar, (depending on how tart/sweet you like it)
  • 2 Tbsp quick cooking/minute tapioca
  • 1/4 tsp salt
  • zest of one lemon
  • 1/4 cup flour, all-purpose or gluten free
  • 1 cup quick oats, uncooked – regular or gluten free
  • 1/2 cup firmly packed brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold butter, cut into small pieces
  • 1/2 cup walnuts – optional
  • creme fraiche or whipped cream or vanilla ice cream


  • Heat oven to 375 degrees.
  • In a large bowl combine rhubarb, strawberries, sugar, tapioca, salt and zest.
  • Let stand 10 minutes
  • In a separate bowl mix the oats, flour, brown sugar, and cinnamon.
  • Cut in the butter until the mixture resembles coarse crumbs.
  • Stir in the nuts, if using.
  • Pour strawberry rhubarb mixture into a 9" square baking dish.
  • Sprinkle topping evenly over the fruit.
  • Bake for 40-45 minutes.
  • Serve warm with creme fraiche, whipped cream or ice cream.
